Garlic and Mushroom Stroganoff

A simple dish with a sophisticated finish!

Ingredients

2 teaspoons olive oil
1 small small onion, finely chopped
1 teaspoon Garlic Stir-in Paste, Gourmet Garden
1 tablespoon Chives Stir-in Paste, Gourmet Garden
350-500 g sliced assorted mushrooms
150 g sour cream
1 tablespoon gherkins, finely chopped
1 teaspoon capers, finely chopped (optional)
salt and black pepper
potatoes, roasted as a side

Method

Start by heating a large frying pan with the oil, add onion and garlic. Allow to cook through until the onion has started to soften.

Add mushrooms and cook for a minute or two or until the frying pan is back to temperature.

Add the gherkins, capers and chives and stir though.

Once cooked, and the mushrooms are tender, add the cream, salt and pepper and remove from the heat.

Serve with roast potatoes.
